This recipe came from bigoven.com and I followed it almost to T with a couple of exceptions. It was just mouthwatering-ly delicious. Sweet and spicy, the chicken was tender, and I had left overs today for lunch and it was even better the 2nd time around. Very simple recipe! Please don't miss it!
Bourbon Chicken
Servings: 4
Calories per serving: ~300
Ingredients:
2 lbs boneless, skinless chicken breasts, cut into bite size pieces
1 tbsp olive oil
1 garlic clove, minced
1/4 tsp ginger (ground or fresh)
1/2 tsp cayenne pepper
1/4 cup apple juice
1/3 cup light brown sugar
1 tbsp apple cider vinegar
1/2 cup water
1/3 cup soy sauce
1 tsp Sriracha (less for less heat, more for more heat)
1 tbsp corn starch (to thicken sauce, if desired)
Directions:
In a small bowl, mix together the garlic, ginger, cayenne, apple juice, brown sugar, vinegar, water, soy sauce, and Sriracha.
Set aside.
Heat about a tablespoon of olive oil in a skillet, then add chicken. Cook until chicken begins to brown a little.
Remove chicken from skillet and set aside.
Add sauce mixture to skillet and heat on medium until well blended and dissolved. If you desire thicker sauce, add 1 tbsp of corn starch and mix until sauce begins to thicken.
Add chicken back to skillet and bring to a hard boil, then reduce heat to low and simmer, uncovered, for ~20 minutes.
Serve over hot rice.
I also steamed some broccoli on the side which was a delicious companion to the sweet and spicy chicken. This is a quick and simple recipe that quickly became a favorite in our house! It's also very kid friendly if you cut down the heat.
